Sébastien works on creative and innovative dishes.

He trained at the Hotel School in Koksijde and cooked at Comme Chez Soi, Hof van Cleve, Pierre Gagnaire and ’t Convent, among others, where he stayed for a while and found the love of his life: Sharon De Volder, the daughter of the house. He also did internships at Hertog Jan, Stephan Destrooper and Quique Dacosta.

Together they opened Vol-Ver, a small place of their own in a country villa with rustic wooden beams, an open fireplace and a partly open kitchen.
